The plot "Les Grèves" Beaune 1er Cru is part of a series of marl-limestone dating from the Middle Oxfordian (upper Jurassic stage formed 155 million years ago), mixed with brown clays stemming from the substrate's disintegration.
The marly component of this Oxfordian soil is reduced in favor of fine beige or brown limestones, with oolitic and gravelly fossil debris at the origin of the name "Les Grèves", from the popular Latin term grava meaning "sand, gravel" .
The Pinot Noir vines planted on the most chalky brown and best exposed soils of the slope give red wines of great elegance, with a fine and silky texture.
The Beaune 1er Cru wine from the Maillard estate is aged for 18 months in Burgundy pieces, 40% of which are new.
