CLASSIC is a muscadet elaborated in a "ready to drink" and fruity style, it is to consume in its youth.



TERROIR

CLASSIC is a wine made from a blend of three distinct terroirs :

  • a terroir of Granite, an acid rock rich in silica, crystallized by a slow cooling of the magma millions years ago in the earth's mantle, then raised to the earth's surface during tectonic movements that gave birth to the Armorican Massif. This terroir offers the vines a poor soil.
  • a terroir of Gneiss with two mica which is a metamorphic rock, that is to say a rock formed in the solid state from another rock (in this case a clay sedimentary rock) under the effect of a temperature and pressure change of the environment. Less rich in silica, richer in trace elements and harder than the Granite, it brings more minerals to the earth.
  • a terroir of Orthogneiss, a metamorphic rock similar to the previous one but which results from the Granite's metamorphism. Its composition is close to the Granite'one.

The blend proportions of these three terroirs in the CLASSIC cuvée may vary each year, depending on the harvest.



WINEGROWING & WINEMAKING

The vineyard is cultivated according to the Organic Farming specifications since 1975 and according to the Demeter Biodynamics specifications since 1998.The vine yields are voluntarily limited to 40 hl/ha in order to gain in quality. The harvest is carried out manually and the grapes are pressed by pneumatic pressing which ensures a gentle and slow extraction.

After pressing, the must is not settled and the alcoholic fermentation starts spontaneously under the indigenous yeasts, action, followed by malolactic fermentation. The must remains in a tank for a lees ageing phase for a few months, then it is slightly filtered before bottling.

The statement "Elevé sur lies" is not labeled on the bottle because this mention requires a bottling date between 1 March and 30 November of the year following the harvest's one, a constraint that the domain does not want to follow.
