- Nose: open and delicately toasted. Notes of white flowers, toasted almond, lemon, orange and kumquat.
- Palate: very tasty. Its smoothness is highlighted by a fine acidity. Long finish of candied citrus fruit.

OUR OPINION: a very fine Saint-Aubin with a rather unctuous and complex profile. Full-bodied on the palate, a delight!
Set back from Puligny and Chassagne, the vineyards of Saint-Aubin are located in a very hilly landscape that offers its vineyards a wide range of exposures and very different soil types. Magnificent white wines are produced here, along with some fresh, fruity reds.
The domaine's parcel is located in the 1er cru Sur le Sentier du Clou locality. It faces south-east, at an altitude of around 300-350 metres. The Chardonnay vines were planted on its steep slopes in 2016.
The marly soils are ideal for making great white wines. Sur le Sentier du Clou is one of the designation's most famous climats.
The vines are managed according to the principles of an "intelligent" sustainable agriculture. Treatments on the vines are carried out only when absolutely necessary.
The grapes are harvested by hand and the whole bunches (berries and stalks) are immediately pressed in the winery. The alcoholic fermentation takes place in the presence of native yeasts, followed by the malolactic fermentation.
The wine is aged for 12 months on its fine lees in new barrels (25%) and in barrels of 1 or 2 wines. Regular stirring of the lees is carried out during the first months of ageing.
The must is then racked into stainless steel tanks to rest for 3 months. It is then fined and filtered before bottling.
When bottling, the wines are corked with a DIAM5® cork stopper ensuring the absence of TCA contamination (or cork taste).
