The Côtes du Jura's designation stretches on 600 ha from the Loue's hillsides to the south of the Jura. It offers distinct soils from north to south: the blue marls, dominant in the north, gradually give way to soils rich in limestone in the south, thus changing the wines aromatic profile. The exposure and the slope of the vineyards allow the vine to find a healthy moisture deep in the soil while the calcareous screes reflect, during the night, all the heat stored during the day, protecting the plants from the sudden temperature variations between day and night.
This designation produces mainly white wines, that are traditionally aged for a long time in oak barrels without any topping, what gives them those aromas so specific to the region. The production of red wines is mainly concentrated in Arbois.
