WINEGROWING & WINEMAKING
Ratafia is a wine liqueur produced with the freshly-pressed must of Pinot Noir (which juice is used for the champagne production) that the Doyard family blends with distilled champagne and matures in oak barrels for two years.
The grapes of Pinot Noir are stemming from a small plot of less an hectare and located in the Grand Cru village of Aÿe, and the wine liqueur Ratafia is home made, without any addition of caramel.
