WINEGROWING & WINEMAKING

Ratafia is a wine liqueur produced with the freshly-pressed must of Pinot Noir (which juice is used for the champagne production) that the Doyard family blends with distilled champagne and matures in oak barrels for two years.

The grapes of Pinot Noir are stemming from a small plot of less an hectare and located in the Grand Cru village of Aÿe, and the wine liqueur Ratafia is home made, without any addition of caramel.

Food & wine Pairing

Certains conseillent de boire le ratafia comme digestif, mais nous le préférons à l’apéritif. Extrêmement gourmand, sucré tout en restant vif, il prépare agréablement le palais avant un repas. Il s’accorde sur des mélanges sucrés-salés, des apéritifs à base de noisettes ou amandes grillées, ainsi que des pistaches. Il accompagne parfaitement le melon en entrée, à la façon d’un porto, et relèvera délicieusement les desserts chocolatés.
