The bubble is fine, the nose reveals aromas of toasted hazelnuts, leaven, lemon, pear, and a touch of frangipane. In the mouth, the juice is tonic, fresh and lemony with a touch of almond in the finish. It's fresh and subtle. Great success for this tensed yet tasty Blanc de Noir champagne !

The Grillons is a single plot's champagne produced from very old vines (65 years old) of Pinot Meunier planted in Montigny-sous-Châtillon, in the Marne Valley, where the Pinot Meunier is the dominant grape variety (80% of the grape varieties).
Here is a complete change of landscape and terroir compared to the other estate's champagnes. The Senonian chalk, which is outcropping in the area of Le Mesnil Sur Oger, disappears from Châtillon Sur Marne, a neighboring town of Montigny. When the Chalk Sea retreats at the end of the Cretaceous stage, a new series of marine regression and transgression ensues (seas withdrawal and arrival on land) from the Paleocene to the Eocene, between -65 and -40 million. years. These transgressions favored clays, sands and marls deposits in the region, and the current vineyard is mainly based on Lutetian and Bartonian (Eocene) marls and limestones, with in places fluvial sands on which is located the cuvée Les Grillons plot.
The Pinot Meunier grapes are harvested then pressed. The alcoholic fermentation starts spontaneously in presence of the native yeasts, the must also performs the malolactic fermentation. It is then aged on its fine lees in Bordeaux barrels of 225 l for 10 months. After bottling and second fermentation, the champagne rests in the estate chalk cellars during 7 years.
After disgorging, sugar is added at 4 g/l with an homemade liqueur de dosage prepared from reserve wines and / or wines of the year.

Les Grillons est un champagne 100% pinot meunier très charmeur qui offre en bouche une belle tension. L'apéritif est le moment qui saura le mieux le révéler, à condition de l'accompagner d'un assortiment de pistaches, d'amandes ou de noisettes, ou éventuellement des gougères au fromage ou des canapés à la truite fumée. Il s'exprime avec talent sur des volailles grillées, un bar rôti ou une dorade grillée. Du côté des fromages, il fera un bel accord avec un brie de Meaux ou un coulommiers.
