Located in Talairan, the vineyard of the domain Serres-Mazard goes alongside to the wild orchids of the Corbières lands where flower perfumes and colors are mixing together.
Fascinated by history and botany, Jean-Pierre MAZARD, exceptional wine grower, watches over the family domain that passed down from father to son for three generations. As a Nature lover, he developped the domain to allow visitors to discover the wildlife that makes the wealth of its terroir through a route named "the path of orchids" and going along vineyards. Some wild orchids we can observe during the walk are very rare, as the Ophrys Scolopax that we can see drawn on the label of some of his wines.
He prints his deep love for the Cathar lands in wines of a rare authenticity, making fresh and tasty white cuvées, and powerful and sunny red bottles that reveal all the perfumes of the guarrigue and the ripe fruits: a real « silversmith's creation » !
Wedged between the Pyrenees and the Massif Central, the Corbières region has had a very complex geological history which explains the great diversity of soils. Its vineyards are based on very specific terroirs that can be identified by the geology or by a dominant soil.
The vines of the SERRES-MAZARD estate are planted on the Saint-Victor terroir: it benefits from a very homogeneous climate, of the Mediterranean type, but marked by the relative distance from the coast, 50 km away. The soils of this vast plateau, whose altitude varies from 150 to 300 meters, are composed of sandstone, clay, limestone and locally shale, which was formed in the Eocene, between 55 and 37 million years ago, in a continental environment.
The red wines are generous, full-bodied and round, with well-melted tannins, while the whites are well-balanced and characterised by their aromatic power.
The estate works according the Sustainable Agriculture principles and is certified High Environmental Value since 2019.
The grape varieties are Grenache blanc, Marsanne, Maccabeu, Grenache gris, Cinsault, Carignan, Grenache, Syrah and Mourvèdre. The winemaking is traditional, fermentation in vats and ageing for 12 to 18 months for the red wines and winemaking in oak barrels for the whites.
I have been working with this estate since the beginning, and I am particularly fond of its wines, which charm with their aromatic power and can age wonderfully well. I have never been disappointed by their wines, which are of impeccable quality, with no defects. I offer them to my guests without fear of the slightest alteration.
