Chablis is one of the most endangered vineyards in the world: winemakers have to deal with these spring events until mid-May, which can cause irreversible damage when buds burst. The methods put in place to protect themselves, such as the vines spraying, for example, have strongly contributed to the vineyard maintenance.
Located south of the Paris Basin on a geological depression dating from the Upper Jurassic (- 150 million years), the Chablis vineyard has a clay-limestone soil containing fossilized shells, called "Kimmeridgian limestone". All the Grand Cru and Premier cru parcels of Chablis are established on these lands.
A good wine of Chablis is tight and nervous, it reveals flint flavors typical of its terroir, whose intensity varies depending on its "Premier Cru" or "Grand Cru" quality.
- Nose: extremely rich and slightly creamy. Notes of marzipan, candied citrus fruit with a hint of pear and white peach.
- Palate: invigorating, fluid and mineral, with a lemony and salivating finish.

OUR OPINION: a very fine Chablis, powerful and generous, offering great tension on the palate. A wine of great sapidity!
- Nose: intense and charming. Slightly creamy notes, aromas of green apple granny smith, candied citrus peel.
- Palate: tonic, salivating, and very perfumed. Lemon finish.

OUR OPINION: a superb vintage of great complexity and great charm. This wine is very rich, it has that little "on ne sait quoi" that makes it so unique and recognizable. I have always loved this cuvée, it is the estate's signature, and the 2018 vintage is very beautiful!
- Nose: smoky and pleasantly fragrant. Beautiful complexity. Toasted notes, citrus aromas with a hint of candied orange and white flowers.
- Palate: tonic and salivating. Lemon finish.
Tasting date: December 2022.
OUR OPINION: very beautiful 2021 vintage! The low yields did not allow a large production but the quality is here! This little Chablis has a lot of character!
- Nose: tasty and intense. Aromas of yellow peach and candied orange, with a touch of white flowers and light creamy notes.
- Palate: supple attack, tasty and fruity juice. Slightly saline finish.

OUR OPINION: a tasty and complex vintage, beautiful freshness.
- Nose: intense. White flowers, vine peaches and lychee, pink grapefruit.
- Palate: supple and tasty, fresh and with a nice tension. Lime finish.
Tasting date: January 2023.
OUR OPINION: full and very fragrant vintage. It seduces by its freshness and its tonicity.

- Palate: fresh, tonic and enveloping. Long lemony and delicately aniseed finish.

- Color : Beautiful pale colour.
- Nose: Smoky and slightly toasted. Aromas of hazelnut, lemon, grilled almond, white grapefruit with a hint of coriander.
- Palate: elegant, perfumed, round and saline.

- Nose: delicate and very fine. Citrus notes dominated by lemon and tangerine, accompanied by pleasant scents of mousseron with a hint of butter.
- Palate: pleasant with its roundness and its beautiful acidity which invigorates the juice.

OUR OPINION: a very tasty and gourmet Chablis!

OUR OPINION: saline - fresh - smooth. Decanting this wine is essential, 3 hours are needed for it to open. It is very, very far from the Chablis standards, but it is a very nice discovery!
