Benoît Aymard is the son of a Cahors's winemaker. After having studied oenology, he made his own experience working in different wine estates in Burgundy and Cahors. His father owns in the commune of Cabanac 10 ha of vines inherited from the family for three generations, where Benoît also intervenes, making in 2011 his first harvest and his first winemaking trials.
In 2014, Benoît bought the estate from his father and is now running the Clos d'Audhuy. He keeps only 3 ha of vines, planted in 1987 and 1976, with which he produces the 2014 vintage, while continuing in parallel to restructure the vineyard by replanting Malbec and Sauvignon Blanc on the remaining 7 ha. It also has some vines of Merlot in renting.
Obstinate and determined, Benoît wants, above all else, to produce wines of top quality and will be certified Organic Farming in 2018, the reward of three long years of conversion.
Two types of red wines are produced: Clos d'Audhuy, vinified in small vats and aged in oak barrels for 12 and 14 months, and the red Les polissons wine, vinified in vats, with a short maceration to produce a very fruity juice. About 10% of the must of red Les polissons are used to produce the rosé of the same name.
True to his commitment into quality and "clean" wines, Benoît does not use any oenological adjuvant to stabilize musts, both racking and coarse filtration allow to eliminate the main unwanted residues coming from winemaking. He adds the minimum quantity of SO2 necessary to ensure proper wine preservation at bottling; the total SO2 levels in the different cuvées are low, between 40 and 60 mg / l.
At the tasting, the wines immediately seduced us with their elegant expression, fruity, pulpy, and finely spiced, with nice woody notes for Clos d'Audhuy, a springtime freshness for the red Les polissons, and a tremendous charm for the rosé!
- Nose: generous. Notes of coffee and black cherry.
- Palate: silky body with fine tannins. Delicious cherry finish.

OUR OPINION: this Cahors wine is as well-made as ever, elegant and tasty. I've always appreciated Benoît Aymar's work, and the passing years only confirm his talent!
