In the hamlet of Cailhol, in Minervois, the vineyard holding Cailhol Gautran has been making wines for four generations. The current surface of the vineyard is about 55 hectares, the largest part of which is situated on the plateau of Cazelles, a soil with a growing reputation, that could become later "Cru Cazelles", as there is already a "Cru la Livinière".
Nicolas and Olivia Gautran have long since adopted the sustainable cultivation methods. Vinification practises are traditional, except for their wine aged in clay amphorae, where the vinification processes are totally natural, without any oenological input or sulfur addition.
Each vine is fermented separately and blend is made just before the bottling.
The domain is a real pearl of Minervois. It produces white, rosé and red wines, which tasting was a great moment of pleasure: every wine has a distinct identity and a unique aromatic style. They are highly elegant and fine wines.
