Located on plots whose slope can exceed 45% and whose altitude is between 250m and 450m, the old vineyards of Savagnin are based on varied soils dating from Jurassic (between 182 million and 172 million years before our era) and made up sometimes of limestone with flint, or red limestones with quartz grains, sometimes of black marl or blue marl poor in fossils and known as "marnes de Rosnay".
The Château-Chalon designation is strictly reserved for the "vin jaune". The city of the same name is the historic heart of this wine production since the city and vineyard were founded in the 5th century by the Abesses. A single variety is authorized to give birth to the "vin jaune": the Savagnin.
The method for elaborating this wine consists of a slow grapes fermentation followed by an oxidative ageing in oak barrels for at least 6 years and 3 months, without topping (technique used to fill the air headspace between wine and the top of the container with young wine). An yeast's veil then develops on the must surface and preserves the wine of oxidization while giving it its unusual fragrances.

Pour découvrir puis apprécier ce vin à la belle couleur or, il est nécessaire de créer un environnement favorable à sa dégustation, en suivant tout simplement les conseils des Jurassiens qui le recommandent, à juste titre, avec un très vieux comté ou un vieux beaufort, accompagné d’un morceau de lard, de quelques noix fraîches et du pain. L’accord est vraiment délectable et fonctionne à merveille. Une combinaison que l’on apprécie en hiver, à côté d’un bon feu de cheminée.
Mais il mérite beaucoup mieux : il réalise des accords somptueux avec des morilles revenues dans un peu de beurre. Ce vin aime tout ce qui est onctueux et velouté. C’est le seul qui permette de réaliser des sauces extraordinaires, en les imprégnant de son goût si particulier. On le cuisinera ainsi avec des crustacés, des écrevisses, des faisans, des volailles et bien sûr avec le coq au vin Jaune, le grand plat régional de son terroir.
