DESCRIPTION


LES JARDINS DU MESNIL BRUT NATURE is a non-vintage Blanc de Blanc (100% Chardonnay) champagne made from a blend of classified Grand Cru plots located in Le Mesnil Sur Oger. It is made without any sugar addition after disgorging.

TERROIR

The terroir of Le Mesnil Sur Oger consists mainly of a chalk soil dating from the Campanian as well as gravel resulting from its weathering. It was formed 75 million years ago, when the region was overrun by a shallow, warm sea, rich in algae and microorganisms. The latter skeletons piled up on the seabed and sediment over time to form, after a few million years, a very pure chalk, very rich in limestone since its calcium carbonate content reaches 90%.
With a 40% porosity, the chalk soil offers a high water retention capacity, which is a major asset for the vine.

WINEGROWING & WINEMAKING


The grapes are harvested manually and pressed immediately after picking by a slow and gentle pressing. Only the cuvée is used, that is to say that only the juice from the first three presses is kept for the production of the champagne LES JARDINS DU MESNIL BRUT NATURE. 30% of the must is vinified in 225 liter oak barrels and the remaining 70% is vinified in stainless steel vats.
The alcoholic fermentation takes place under the native yeasts action, or using a native yeast starter made from the must, or more exceptionally, from active dry yeasts.

The must does not make its malolactic fermentation, it is racked to remove the coarse lees which are the seat of lactic bacteria, then a slightly sulphites dose is added before a fine lees ageing phase of 10 months in Bordeaux barrels (225 l) for 30% of the must, and in stainless steel tanks for the remaining 70%.

The wine is bottled with its "liqueur de tirage" for the second fermentation and it rests for 6 years on slats. After disgorging, no sugar addition.
