OUR OPINION: the skin maceration, even in small percentages, brings candied aromas to the nose, but the palate remains tense. A real curiosity!

The champagne TEXTURES is a blanc de blancs champagne, 100% Chardonnay, made from a single year and a single parcel of land, located in a place called Biaune, between forest and pasture, which offers a cold microclimate.
The soil of the Biaune place dates from the Kimmeridgian period (-154 à -150 million years) and is composed of three layers of marl separated by two layers of limestone, rich in marine fossils.
The sedimentation of this soil took place in a deep marine environment, when the sinking of the earth's crust caused a major marine transgression in the region.
The estate is certified Organic Agriculture by Ecocert since 1998. The Pinot Noir vines are about 35 years old.
The grapes are harvested in several stages and only when they are fully ripe. Harvesting can sometimes last more than 3 weeks.
Once picked, the grapes are brought to the winery to be vinified in Qvevri (Georgian amphorae): 10% of the intact berries volume is kept and poured into the Qvevri while the remaining 90% of the volume is immediately pressed in a traditional Coquard type vertical press and the juice flows into the Qvevris over the intact berries.
This allows for a partial skin maceration that will bring color and atypical flavors to the champagne without dominating since the maceration is only 10%.
The partial maceration lasts about 8 months during which the must carries out its alcoholic and malolactic fermentations. No yeast is added, the fermentations are carried out by the indigenous yeasts and bacteria.
After a short period of maturation, the must is racked and bottled with the addition of a liqueur de tirage for the second fermentation. The wine is then placed on slats for an ageing period of about 20 months.
No sugar is added after disgorging, the champagne is brut nature.
TEXTURES is a skin contact wine bottled without filtration. It may therefore show a slight cloudiness in the glass, and should not be exposed to heat but kept in a cool cellar.
