  • Palate: lively juice with a delicate touch, evoking the pebble.

Tasting date: tasting note of the 2018 harvest.

OUR OPINION: the tiny quantities supplied do not allow me to sacrifice a bottle for tasting. As those wines are of impeccable quality year after year, I wrote the tasting notes of the 2018 harvest as an indication.

The exceptional bottle's weight (1.8kg) may result in higher shipping costs for the final shopping cart.

TERROIR

The champagne FIDÈLE is a blanc de noirs 100% Pinot noir from a single year and whose grapes come from the Vouette plot.

The soil of the Vouette place dates from the Kimmeridgian period (-154 à -150 million years) and is composed of three layers of marl separated by two layers of limestone, rich in marine fossils.
The sedimentation of this soil took place in a deep marine environment, when the sinking of the earth's crust caused a major marine transgression in the region.

WINEGROWING & WINEMAKING

The estate has been certified Organic Agriculture by Ecocert since 1998. The Pinot Noir vines are about 35 years old.

The grapes are harvested in several stages and only when they are fully ripe. Harvesting can sometimes last more than 3 weeks. Once picked, the grapes are taken to the winery and immediately pressed in a traditional vertical press of Coquard type which allows for gentle pressing and better extraction of the juice.

Once pressed, the must is vatted to be settled and then transferred to 400 & 228 litre barrels and where it undergoes alcoholic and malolactic fermentations. No yeast is added, the fermentation is carried out by the indigenous yeasts and bacteria.

After a short period of maturation, the must is racked and bottled with the addition of a liqueur de tirage for the second fermentation. The wine is then placed on slats for an ageing period of about 31 months.
No sugar is added after disgorging, the champagne is brut nature.
