TERROIR


The cuvée TERRA is a white blanc de blancs champagne made in clay amphorae. It is produced from a single year and a single parcel, but although it is produced from a single year's harvest, this champagne is not considered a vintage champagne in the administrative sense of the term.
The vinification in terracotta jars gives this champagne an airy elegance and an aromatic complexity that make it unique.

TERROIR

The parcel from which the grapes used to produce the TERRA cuvée come is registered under the number ZH 303. It is located in the place called Le Val Cornet, whose soil dates from the Kimmeridgian period (-154 to -150 million years). The latter is composed of three layers of marls separated by two layers of limestone, rich in marine fossils, whose sedimentation took place in a deep marine environment. They bear witness to a Jurassic period during which the earth's crust underwent both vertical and lateral oscillations, resulting in this diversity of geological facies: a sinking of the earth's crust caused a large-scale marine transgression which resulted in a marl and limestone sedimentation, rich in fossilised ammonites, and whose resulting rocks make up the current soils of the plot ZH 303.

WINEGROWING & WINEMAKING


The Chardonnay vines of the plot ZH 303 were planted in 1974 and are cultivated according to the principles of the Sustainable Winegrowing, which means that the plants are only treated when necessary.

The grapes are harvested manually. They are taken to the winery where a slight dose of sulphits is added to the harvest before its pressing. The juice is then transferred to stainless steel vats for a 12 to 24 hrs settling process. It is then racked into 10-hl Tuscan terracotta jars.
The winemaking is carried out without any addition of oenological products, the alcoholic fermentation is triggered by the action of native yeasts, followed by the malolactic fermentation.
Once all the fermentations are complete, the must is racked and bottled without filtration with the addition of a liqueur de tirage for the second fermentation and the bottles are placed on slats for an ageing period of 7 years.
After disgorging, the champagne is dosed at 1g/l with a neutral liqueur.

La cuvée TERRA est un champagne gourmand, très aromatique et doté d'une belle tension qui lui permet d'accompagner un repas de l'apéritif jusqu'au dessert.
On le servira sur un pavé de truite juste saisi à la poêle, des coquilles Saint-Jacques poêlées, ou des tranches de saumon fumé.
