The biodynamic farming is a continuation of the organic farming, but its specifications are more restrictive than those of the organic farming. To be certified in biodynamic cultivation, the vineyard must be first certified "Organic Farming". It musts then meet the requirements of the biodynamic specifications with the spraying of various herbal preparations to fight against pests and promote the good vines development, and in the respect of the lunar and astral cycles defined in a schedule established at this effect.
In winemaking, the biodynamic vinification prohibits the majority of the oenological inputs tolerated in organic farming, and the permitted sulphite levels are even lower than those set in the organic specifications. Several labels certify the biodynamic viticulture, of which the best known are DEMETER and BIODYVIN.
- Nose: intense and charming. Slightly creamy notes, aromas of green apple granny smith, candied citrus peel.
- Palate: tonic, salivating, and very perfumed. Lemon finish.

OUR OPINION: a superb vintage of great complexity and great charm. This wine is very rich, it has that little "on ne sait quoi" that makes it so unique and recognizable. I have always loved this cuvée, it is the estate's signature, and the 2018 vintage is very beautiful!
- Nose: intense. Creamy notes, aromas of white flowers, lemon, green apple, almond with a touch of fennel.
- Palate: fresh and tonic, salivating and perfumed. Nice aromatic persistence in the finish.

OUR OPINION: as usual, it is superb. This vintage is generous, tasty and tonic. Excellent!
- Color: clear. Salmon color.
- Nose: intense and fruity. Aromas of rose, mirabelle plum and apricot with a touch of spice.
- Palate: tonic and tasty.

OUR OPINION: Always so beautiful, I love it! Not a single flaw for this wine made without any added sulphites: it is invigorating and intense, it's delicious. For lovers of maceration wines or those who are ready to think outside the box.

OUR OPINION: this wine is a curiosity, the addition of a little of Riesling to the Gewürztraminer gives it an exceptional tonicity, and will please all those who are looking for Gewürztraminer wines with little sweetness.

OUR OPINION: saline - fresh - smooth. Decanting this wine is essential, 3 hours are needed for it to open. It is very, very far from the Chablis standards, but it is a very nice discovery!
- Nose: very delicate. Creamy notes with aromas of citrus peel with a hint of anise.
- Palate: silky with a nice tension. Long and lemony finish.
