OUR OPINION: the tiny quantities supplied do not allow me to sacrifice a bottle for tasting. As those wines are of impeccable quality year after year, I wrote the tasting notes of the 2019 vintage as an indication.
The grapes that give birth to the CHARDONNAY LES BRUYÈRES cuvée come from the locality Les Bruyères , located in a natural amphitheater in Arbois. Its soil consists of Triassic schistose marls dating from the Rhaetian, the upper Keuper stage, and whose sedimentation took place between -252 and -201 million years ago : at that time, the Jura region consisted of vast, shallow and calm lagoons.
This substrate is covered, on the surface, by a thick runoff silt layer, very beneficial to the vines which can easily make the roots penetrate and benefit from an essential water resource to overcome summer droughts.
Exposed full south, the vines benefit from an optimal development. The oldest were planted in 1938, they are almost 100 years old, and the youngest date from 1973, they are around fifty years old.
The vines have been cultivated according to the Biodynamics principles for more than 15 years and the soils are all plowed. The estate is certified "Organic Agriculture" by Ecocert and "Biodynamie" by Biodyvin.
The grapes are harvested manually, then pressed by pneumatic pressing.
The must is then transferred into 228-liter barrels where it will carry out its alcoholic fermentation (thanks to the native yeasts present inside), and then its malolactic fermentation performed by the lactic bacteria. In those same barrels, the must is matured on its fine lees for 24 months. 20% of it has been vinified in new oak barrels.
Once the ageing is over, the must is racked and lightly filtered before bottling.
