OUR OPINION: the tiny quantities supplied do not allow me to sacrifice a bottle for tasting. As those wines are of impeccable quality year after year, I wrote the tasting notes of the 2014 vintage as an indication.

The VIN JAUNE LES BRUYÈRES cuvée is an oxidative wine produced from Savagnin vines planted on the Les Bruyères locality. It is located in the Arbois village and occupies an amphitheater carved in the Triassic marls, very favorable to the local grape varieties optimal development.
The plots are based on a substrate made up of slaty marls dating from the Rhaetian period, whose sedimentation took place in shallow lagoons between -252 and -201 million years ago.
This substrate is covered, on the surface, with a 10 to 30 cm thick runoff silt layer. The root system can penetrate easily and the natural water retention properties of the soil allow the vines to face drought without difficulty.
The vines have been cultivated according to the Biodynamics principles for more than 15 years and the soils are all plowed.
The grapes are harvested manually, destemmed and pressed by pneumatic pressing. The must is then transferred to vats where alcoholic fermentation starts spontaneously under the indigenous yeasts actions, followed by the malolactic fermentation. It is then aged for 6 years in 228 liter barrels.
No topping is made during these long ageing years : the wine part which evaporates gives place to the oxygen and the yeasts present in the must develop a veil on its surface which will isolate it and protect it from the air. The yeasts work during the aging phase will contribute to the formation of certain aromas typical of the 'vin jaune'.
The must is then lightly filtered before bottling.
