TERROIR


The grapes that give birth to the CHARDONNAY LES GRAVIERS cuvée come from six localities on two differents terroirs. The vines are spread over the following plots & terroirs:

  • Rosières, en Ruzard and Les Bérangères. They form what is called "Le Coteau des Rosières" that has soils made up of a 2 to 3 meters high thick layer of clay with chailles (chailles are silky limestone kidneys) which covers the underlying layer of iridescent Keuper marls formed 250 million years ago.

  • Corvées sous Curon, Corvées and Chevrettes, with soil consisting of a rocky scree thick layer coming from the limestone cornices dating from the Bajocian, Middle Jurassic period (-174 to -145 million years) characterized by the presence of a shallow warm sea dotted with islands. In depth, under the limestone scree layer, we find the Lias marls, widespread in the Jura vineyards, and which date from the Lower Jurassic (-201 to -174 million years) when the region was covered with a shallow, oxygen-poor sea.


WINEMAKING & WINEGROWING


The vines have been cultivated according to the Biodynamics principles for more than 15 years and the soils are all plowed. The estate is certified "Organic Agriculture" by Ecocert and "Biodynamie" by Biodyvin.
The grapes are harvested manually, then pressed by pneumatic pressing.

The must is then transferred into 228-liter barrels (1/5 are new) where it will carry out its alcoholic fermentation (thanks to the native yeasts present inside), and then its malolactic fermentation performed by the lactic bacteria.

In those same barrels, the must is matured for 12 months.
Once the ageing is over, the must is racked and lightly filtered before bottling.
