OUR OPINION: an incisive and tonic vintage, very energetic. Beautiful aromatic richness. It deserves to be kept for a while in the cellar.
The grapes that give birth to the CHARDONNAY LES GRAVIERS cuvée come from six localities on two differents terroirs. The vines are spread over the following plots & terroirs:
The vines have been cultivated according to the Biodynamics principles for more than 15 years and the soils are all plowed. The estate is certified "Organic Agriculture" by Ecocert and "Biodynamie" by Biodyvin.
The grapes are harvested manually, then pressed by pneumatic pressing.
The must is then transferred into 228-liter barrels (1/5 are new) where it will carry out its alcoholic fermentation (thanks to the native yeasts present inside), and then its malolactic fermentation performed by the lactic bacteria.
In those same barrels, the must is matured for 12 months.
Once the ageing is over, the must is racked and lightly filtered before bottling.
