TERROIR


The soils of the Sancerre vineyards have been shaped by erosion from the different geological facies exposed by numerous faults, including the two famous north-south faults known as the Sancerre and Thauvenay faults, which cross the vineyards from one side to the other.
These bring the Upper Jurassic (-154 to -140 Ma) layers to the west into contact with the Cretaceous (-96 to -65 Ma) and Eocene (-64 to -34 Ma) formations to the east.

The parcels used to make L'ÉTINCELLE are located in the village of Saint-Gemme-en-Sancerrois, on a flinty soil known locally as “chailloux”.

This siliceous soil comes from recent alluvial and colluvial deposits; its content of fine elements (clays and silts) and more or less coarse elements (sands, gravels, pebbles) is variable. Its formation dates from the Cretaceous and Eocene periods, and it rests on Kimmeridgian or Portlandian strata; it is rich in silica and remarkable for the presence of flint.

WINEGROWING & WINEMAKING


The grapes are cultivated according to the Organic Farming principles, for which Ecocert certification was officially obtained in 2023.

The vines used to produce L'ÉTINCELLE are 20 years old and their yield is around 50 hl/ha.

Harvesting is mechanical, the grapes are then gently pressed and the juice transferred to thermo-regulated stainless steel tanks, where the alcoholic fermentation is carried out by indigenous yeasts.

The must is then racked into stainless steel vats, where it matures for 10 months.

Once the ageing phase is over, the must is racked and lightly filtered before bottling.
