DESCRIPTION

PROHIBITION is a blanc de noirs champagne made from 60-year-old Pinot Meunier vines planted in the village of Mardeuil, where Richard FOUQUET and his family come from.
The surface area of the two plots is around 1 hectare, and the Pinot Meunier grapes used to be blended with Chardonnay from Cramant in the estate's TRADITION cuvée.
In 2012, Richard FOUQUET stopped producing this blend of white and black grapes to concentrate on making 100% Chardonnay champagnes only.

However, he took a new interest in Pinot Meunier at a trade fair in 2017, where he tasted a champagne made from 100% of this grape variety.  He was seduced by the champagne's style, and already knew the profile he would attribute to his own Blancs de Noir champagne: the PROHIBITION cuvée was born, fresh and delicate.



TERROIR

The Pinot Meunier vines are planted on two parcels located in the Marne Valley, on the left bank:

  • Les Châtaigniers, planting dates: 1954 and 1958,
  • Les Carrés du Midi, planted in 1960.

Their terroir consists of white Campanian chalk (Upper Cretaceous) which gives rise to light-textured carbonate soils. Wines from this famous area have been renowned for a very long time.

WINEGROWING & WINEMAKIN

To make the PROHIBITION champagne , the estate uses the cuvée must only, i.e. the must from the first three presses.

Although not vintage, the must comes from the 2020 harvest, with 10% of 2019 reserve wine.

After pressing, the juice makes its alcoholic fermentation in stainless steel vats (87%) and 400-litre oak barrels (13%). The malolactic fermentation is not carried out, and the must is aged on its fine lees for 7 months.

It is then racked and bottled for its second fermentation and rest on slats for 30 months. No sugar is added after disgorging.
