OUR OPINION: 2021 is a livelier, tauter vintage than 2020. It is perfectly balanced, with lovely tension and complexity. 2021 is more mineral than fruity. It's very fresh and thirst-quenching!

DESCRIPTION


TÉTHYS 2020 is a vintage blanc de blancs champagne made from a blend of 4 plots from the Grand Cru villages of Cramant, Chouilly and Oiry :

  • Cramant - Les Bergeries, planting date : 1984
  • Chouilly - Le Mont Aïgu, planting date : 1970 and 1979 ; Les Caurès, planting date : 1946
  • Oiry - Gros Mont, planting date (1969)



TERROIR

The different plots that go into the TETHYS 2020 composition are all located on a homogeneous chalk soil dating from the Campanian. The only differences are the thickness and the type of the microorganisms fossilized inside. This terroir was shaped for 30 million years, in the Upper Cretaceous (-99 to -65 Ma), beginning with a sedimentation in shallow water of a very calcareous mud which, over the centuries, was transformed in chalk.
The extreme porosity of the chalk is a blessing for the vineyard : it provides a precious water for the vines roots while allowing excess water to be evacuated.



WINEGROWING & WINEMAKING


For the TETHYS 2020 production, the domain uses :

  • the must of the 'cuvée' from vines planted in 2005 on the Les Caurès plot, i.e. the juice from the first three presses,
  • and the must of the 'taille' for the oldest plots, that is to say the must resulting from the two additional presses carried out after those allowing to obtain the 'cuvée'.

The must comes mainly from the 2020 harvest, with 32% of reserve wines (50% from 2019, 25% from 2018, 12,5% from 2017 and 12,5% from the previous years).


After pressing, the juice undergoes its alcoholic fermentation in stainless steel vats as well as all of its malolactic fermentation before a 7 months ageing phase on fine lees, always in stainless steel vats.
It is then drawn off and bottled for the second fermentation and rest on slats for 22 months. After disgorging, sugar is added at a rate of 1,5 g/l with a neutral "liqueur d'expédition".
