The Riesling vines that make up this cuvée come from plots in the classified Grand Cru Wineck-Schlossberg area, named after the old Wineck château (12th century) right in the centre of the vineyards.
This vineyard, located in the communes of Katzenthal and Ammerschwihr, covers 27.4 hectares at altitudes ranging from 270 to 420 metres, facing south-east.
The soil lies directly on the original granitic bedrock, a granite with two micas. The Rieslings from this terroir have a mineral and saline profile.
The vines are grown according to the principles of the Organic Farming and the Biodynamics.
The grapes are harvested by hand, then pressed in tunes in which the alcoholic fermentation begins spontaneously under the action of indigenous yeasts, followed by the malolactic fermentation carried out by indigenous bacteria.
The must is then aged for 11 months, racked before being filtered through kieselguhr and plate, and then bottled.
