DESCRIPTION


The champagne TENTATION ROSÉE is a rosé champagne made from a blend of equal quantities of Pinot Noir and Pinot Meunier grapes, planted on the same plot.
Although it is produced from a single year's harvest, this champagne is not considered a vintage champagne in the administrative sense of the term.

TERROIR

The terroir of this plot planted with Pinot Noir and Pinot Meunier vines, offers a soil dating from the Kimmeridgian period (154 to 150 million years ago), whose sedimentation took place in a deep marine environment. It bears witness to a major marine transgression linked to a collapse of the earth's crust, which was accompanied by a marl and limestone sedimentation rich in fossilised ammonites, and whose resulting rocks currently make up the plot's soil.

WINEGROWING & WINEMAKING


The Pinot Noir and Pinot Meunier vines that make up this cuvée were planted some fifty years ago. They are cultivated according to the principles of the Sustainable Winegrowing which means that the plants are only treated when necessary.

The grapes are picked by hand and then taken to the winery. After a light sulphits addition to the harvest, the grapes are destemmed and then left to macerate in vats for about 24 to 48 hours. The grapes are pumped over once a day, which allows the marc cap that forms at the vat's top to be mixed with the juice.
The decision to rack is taken after tasting, as the winegrowers do to make a Rosé des Riceys. The must is not pressed, only the free-run juice is racked, after settling, into thermo-regulated stainless steel vats and yeasted with neutral fermenting yeasts for the alcoholic and malolactic fermentations to take place.
Once all ther fermentations are complete, the must is racked with a tartaric stabilisation by cold, then bottled with an addition of liqueur de tirage for the second fermentation.
The bottles are placed on slats for an ageing period of 54 months in the cellar. After disgorgement, neutral sugar is added at 4.5g/l, so it is an Extra-Brut champagne, even if the label simply says 'Brut'.

TENTATION ROSÉE est un champagne rosé très gourmand que les 7 années passées sur lattes ont délicatement brioché.
Il sera parfait en apéritif sur des toasts au saumon fumé ou un kougelhopf salé. Au repas, il accompagnera des rougets cuits au four avec une sauce à l'ail, ou des grillades au barbecue.
