OUR OPINION : totally atypical, this blend of three grape varieties from a Grand Cru terroir is tasty, powerful and delicious! A wonderful discovery!

DESCRIPTION


The FLORIMONT cuvée is subtle blend of the three grape varieties grown on the Grand Cru Florimont site in identical proportions. The three grape varieties co-ferment together.

It's original, and they had to try it!

TERROIR


The three grape varieties that make up this cuvée all come from plots in the Grand Cru Florimont area, whose name means ‘Flowery Mount’.

Located to the west of Ingersheim, on the slopes of the Dorfburg hill, the Florimont terroir faces east, on a gentle slope at an altitude of between 225 and 290 metres. It is a mound of limestone conglomerate on the edge of the Rhine Graben, preserved by faults that bring it into contact with Jurassic oolitic limestone.

This marl-limestone soil deposited by torrents during the Oligocene is made up of pebbles of varying sizes cemented by limestone clays or limestone sands. The composition of the scree varies: it is rich in active limestone, but its fertility depends on the clay, which binds the minerals and retains water.

Wines from this terroir are distinguished by their structure, balance and long life.

WINEGROWING & WINEMAKING

The vines are grown according to the principles of the Organic Farming and the Biodynamics.

The grapes from the three varieties are hand-picked and then pressed in tuns, where they ferment together.
The Alcoholic fermentation starts spontaneously under the action of indigenous yeasts, followed by the malolactic fermentation carried out by indigenous bacteria.

The must is then racked into 5-wine Burgundy barrels, where it matures for 18 months. It is then racked, filtered through kieselguhr and a plate, and bottled.
