The Riesling vines that make up this cuvée come from the locality known as Steinweg, which means ‘stone path’. They are planted on foothill colluvial soil dating from the Pleistocene (Quaternary), or more precisely from the last cold period of the Würmian, which was deposited under periglacial conditions.
The mineralogical composition of these terroirs is highly variable, as is the size of the elements deposited: pebbles, fine sands and clays. These colluviums, which are mainly siliceous and derived from granite and sandstone, are marly and fine at the base of the hillsides. The Rieslings produced from this terroir are full-bodied and flourish when young.
The vines are grown according to the principles of the Organic Farming and the Biodynamics.
The grapes are harvested by hand, then pressed in stainless steel vats in which alcoholic fermentation begins spontaneously under the action of indigenous yeasts, followed by malolactic fermentation carried out by indigenous bacteria.
The must is then aged for 10 months, racked before being filtered through kieselguhr and plate, and then bottled.
