OUR OPINION: a safe bet!
LA SOURCE is a cuvée made from the juiciest grapes of three red grape varieties whose vines are planted on the same terroir.
It is part of a gastronomic wines line of increasing complexity.
The plots that give birth to the LA SOURCE cuvée are located at a place called La Source de Saint-Jean, whose waters are fed by numerous runoff streams that flow from the Mont Ventoux north side. This precious water, available deeply in the ground, allows the 50-year-old vines to withstand summer heat waves and produce beautiful, juicy grapes.
The soil consists of a thick layer of slope colluvium composed of clays and sands which rests on a marl-limestone substrate dating from the Middle Stampian (-34 to -28 million years ago).
This geological formation which outcrops in places in the vines plots testifies to a period of distension in the region during which rift valleys and basins were formed before being invaded by the sea, the Mont Ventoux was then only an island.
The vines are cultivated according to the Organic Agriculture principles and the Agroforestry rules. The vines are planted among grasses and wild plants, attracting auxiliary insects and pollinators.
The harvest is manual, and the grapes are completely destemmed. The must macerates in concrete vats for about 7 days, so that the wine is accessible and on the fruit, while being able to present a ten years cellar potential !
Once the fermentations have been carried out, the must continues its ageing phase in concrete vats and a few very old oak barrels for 18 months.
The use of vats reveals all the terroir quintessence in this wine with slightly peaty aromas. The must is not fined, but lightly filtered before bottling.
Small detail that is important : the bottle is closed by a cork of the DIAM'®s brand, specially designed to guarantee zero wine's contamination by the cork, called "cork taste", thanks to the use of the cork flower previously cleared from the molecule responsible for this aromatic deviance.
