High-end cuvée of the estate, LA PIERRE NOIRE evokes both the rocky and extremely poor soil on which are planted the black Grenache and Syrah vines used for this wine production, and the very black color of their berries.
The plots of the vines that make up the LA PIERRE NOIRE cuvée are located on a very old soil dating from the Triassic (geological period from -250 to -199 Ma). It consists of dolomitic masses with small volcanic rocks pebbles and dolomitic limestones dated from the Muschelkalk (Middle Triassic period which extends from -245 Ma to -228 Ma).
The atypical presence of this terroir in the region comes from a phenomenon of deep bases raising towards the surface during a diapir formation, as is the case at the Suzette place.
In these very poor soils, the vines do not exceed 15 hl/ha, and produce only a few bunches per vine with very small and very black berries.
The vines are cultivated according to the organic farming principles and the harvest is manual.
In the cellar, the grapes are destemmed but the stems are kept and carefully sorted because 90% of them will be added to the grapes in the vat. For that, their quality must be beyond reproach, the peduncle must be very ripe and present spicy flavors.
The grapes and stems macerate for 15 days before being pressed and continuing their fermentation. The must is then aged for 3 years in concrete vats and a few old oak barrels, so that it is not marked by a woody taste or hardened by the oak tannins.
The material thus obtained is silky and dense. It is a complex wine that deserve all our attention to be tasted and enjoyed.
Small detail that is important : the bottle is closed by a cork of the DIAM's brand, specially designed to guarantee zero wine's contamination by the cork, called "cork taste", thanks to the use of the cork flower previously cleared from the molecule responsible for this aromatic deviance.
