The Sylvaner is a grape variety with juicy pulp and slightly acid flavor. Of a non exuberant nature, the vinification in Qvevri suits it very well, the maceration with skins allows it to express all its delicacy through very pleasant floral notes.

The grains are wrapped in a one meter high pocket that is placed in the buried Qvevris where they macerate with their skins.

The maceration of the 2014 vintage lasted nearly eight months, and after the skins removal, the juice were aged for only two months.

The colorless skin of the Sylvaner vine gives this wine a less amber color than other grape varieties, verging on yellow gold. The tannins are barely perceptible, this wine is very fresh, floral, and extremely thirst-quenching (residual sugar: 0.5 g / l).

Les vins en Qvevris offrent une belle palette d'accords mets-vins, leur structure fine et légère accompagne les plats épicés avec discrétion et élégance. Les bouillons, ou les soupes se marient également très bien avec ces vins. La douceur et la délicatesse naturelles du Sylvaner feront un heureux mariage avec des poissons à chair blanche et fine.

On le servira volontiers avec des volailles, ou des plats asiatiques épicés.
