Terroir

TERROIR: two distinct soil types:

  • Fine marls transitioning to clayey or sandy marls, calcareous sandstones, conglomerates, and pebbles dating from the late EOCENE epoch.
  • Loess (pale yellow silt), porous and water-permeable, wind-deposited during the QUATERNARY period.

Viticulture & Winemaking

HARVEST: Manual.

SORTING: At the winery.

WINEMAKING: Crafted in buried 1,500-liter Dolia (amphorae).

  • Whole clusters are enclosed in a mesh bag of approximately 1 meter and placed into the buried Qvevri. The glass lid is then hermetically sealed.
  • Spontaneous fermentation driven by indigenous yeasts for six months. Zero manual intervention, absolutely no additives or inputs.
  • Six months later, the bag containing the grape pomace (marc) is removed from the Qvevris. The juice remains for an additional 4 months of aging inside the Qvevri.

BOTTLING: Without fining, filtration, or added sulfites.

CLOSURE: Natural cork.

NOTE: As with all wines vinified in Qvevris without fining or filtration, the liquid may appear slightly cloudy in the glass. The color, initially orange, will deepen over 24 hours after opening due to natural oxygenation. This is a completely normal phenomenon, characteristic of the most natural wines possible.
