OUR OPINION: to let the wine age a little in the cellar so that the tannins become more rounded.
The cuvée PARADY is a 100% Syrah wine from the locality Le Paradis of the Mauves village. The vines are about twenty years old.
The locality Le Paradis has a soil made up of the famous Granite de Tournon. This primary and massive rock is however sensitive to alteration and gives rise to unstable clayey sands that must be held back by low walls which form this terraces landscape typical of the Rhône Valley.
The grapes are hand-picked and 90% de-stemmed after their arrival at the winery. The alcoholic fermentation takes place in open vats, under the action of the native yeasts.
Twice a day, the marc cap that forms on the must surface is mixed with the juice by pumping over or punching down. Maceration lasts about three weeks.
The must is then racked into oak barrels to be aged for two years. Once the maturation is completed, the must is racked, fined and filtered before being bottled.
