OUR OPINION: extremely tasty and very fresh ! What a nice surprise!
The parcel is located at the foot of the Dentelles de Montmirail, on a soil whose formation, of tectonic origin, took place as a result of a major deep fault that completely deformed and raised the sedimentary terrain deposited on the Triassic layers.
Here, the vines are planted on a soil dating from the Miocene epoch (-16 to -11 My), which is composed of a sandy terrace covered with rolled pebbles from the Quaternary, but also with more recent formations
MUS'CAT is a dry white wine made from the Muscat blanc à petits grains variety.
Usually, this grape variety is used to make natural sweet wines, but in this case, our winemaker decided to make a generously scented dry white wine!
Of course, this "out of the box" winemaking way caused the demotion to the "Vin de France" designation, but anyway, what is important is the idea and the originality!
The vines are cultivated according to the principles of the Organic Agriculture: one row out of two is grassed, and the soil is enriched by adding sheep compost.
The grapes are harvested manually and pressed by direct pressing.
The must is cold settled and fermented at low temperature. Only the alcoholic fermentation takes place, the malolactic fermentation is voluntarily stopped.
The must is racked and filtered by sterile filtration before bottling.
The bottle is sealed with a DIAM1® cork stopper which guarantees the absence of any TCA contamination or cork taste.
