OUR OPINION: what a delicacy! This Saint-Aubin is so elegant, balanced and intricate. Haute couture!
Set back from Puligny and Chassagne, the vineyards of Saint-Aubin are located in a very hilly landscape that offers its vineyards a wide range of exposures and very different soil types. Magnificent white wines are produced here, along with some fresh, fruity reds.
The domaine's parcel is located in the 1er cru En Remilly locality, on the edge of Puligny and Chassagne, and faces south-east.
Its soil is made of Argovian marl (Upper Jurassic - Oxfordian stage, 158 to 156 million years old), covered with limestone scree and brown limestone-clay soils that are perfectly suited to Chardonnay and give rise to smooth, very elegant wines that are quite similar to the best wines from Puligny and Chassagne.
The vines are managed according to the principles of an "intelligent" sustainable agriculture. Treatments on the vines are carried out only when absolutely necessary.
The grapes are harvested by hand and the whole bunches (berries and stalks) are immediately pressed in the winery. The alcoholic fermentation takes place in the presence of native yeasts, followed by the malolactic fermentation.
The wine is aged for 12 months on its fine lees in new barrels (from 20% to 35%) and in barrels of 1 or 2 wines. Regular stirring of the lees is carried out during the first months of ageing.
The must is then racked into stainless steel tanks to rest for 3 months. It is then fined and filtered before bottling.
When bottling, the wines are corked with a DIAM5® cork stopper ensuring the absence of TCA contamination (or cork taste).
