OUR OPINION: very beautiful 2021 vintage! The low yields did not allow a large production but the quality is here! This little Chablis has a lot of character!
The PETIT CHABLIS cuvée is made from young vines about ten years old, with a yield of about 60hl/ha, planted on the place called Chemin des Chaumes, which is itself located on the plateaus overlooking the Fontenay-près-Chablis hillsides.
The place called Chemin des Chaumes is located on a soil dating from the Portlandian (Upper Jurassic), a geological layer about 142 Million years old, characterized by limestones, known as "Barrois limestones", which formed in a shallow marine environment.
Located at an altitude of about 150 to 230 meters, these very hard limestones are separated by marly benches about fifty meters thick which makes them suitable for vine growing.
The vines are grown in accordance with the Organic Agriculture specifications and the winemaking is done with as little input as possible.
Once the grapes are harvested, they are gently pressed, then the juice is vatted in thermo-regulated stainless steel tanks where the alcoholic fermentation starts spontaneously under the indigenous yeasts action.
The must is aged on fine lees for 8 months during which the malolactic fermentation is carried out by the indigenous bacteria.
Once the maturation is complete, the wine is racked, lightly filtered and then bottled.
The bottle is closed by a cork of the DIAM®'s brand, specially designed to guarantee zero wine's contamination by the cork, called "cork taste", thanks to the use of the cork flower previously cleared from the molecule responsible for this aromatic deviance.
