The 70 years old vines are planted on the locality of la Crau, a stony plateau of recent geological formation dating from Miocene, Pliocene and Quaternary. Various geological facies are exposed on this terroir, where we find molassic red sandstone, sands and more or less silty or clay molassic sandstone, quartzite pebbles (siliceous rock with welded quartz crystals), and fossiliferous micaceous sands of the Pliocene.
The Vieux Télégraphe wine is a blend of different grape varieties with a majority of Grenache Noir (65%).
The vines are cultivated according to the sustainable viticulture principles : use of organic manure, green harvest, leaf removal with vines treatment that strictly follows the prescriptions imposed by the Organic Agriculture specifications.
Harvested manually, the grapes are sorted twice in the vineyard and a third time in the cellar. They are lightly crushed, the destemming is selective. The fermentation is traditional, the maceration lasts between 30 and 40 days in stainless steel vats and wooden vats. The must is the aged in a 60-hl french oak foudres for 20 to 22 months.
At the end of the ageing phase, the must is racked and bottled without any fining or filtration processes.
