TERROIR


The vines that give birth to the RIESLING RESERVE cuvée are all around twenty years old and are located halfway up the slopes in the Ribeauvillé village.

The terroir is made up of a geological layers mosaic dating from the Middle and Upper Triassic (-238 to -205 million years ago) which reveals the different sedimentary layers that have accumulated over more than 100 million years and that the erosion and the tectonic movements has exposed in different places.

Thus, there are clayey shell sandstones, dolomitic marls and sandstone marls dating from the lower and middle Muschelkalk (-238 to -233 Ma), then crinoidal limestones and limestones with ceratites dating from the upper Muschelkalk (-233 to - 230 Ma), and finally gray marl banks dating from the lower Keuper (-230 to -227 Ma).

This Muschelkalk calcareous-marly sedimentation took place in a marine environment, when the sea invaded the region. The passage from the marls to the limestone banks testify to a bathymetric variation and a more or less strong oxygenation of the marine environment.



WINEGROWING & WINEMAKING


The vines are cultivated in accordance with the specifications of the organic viticulture. The Jean Sipp estate has also started its conversion in 2018 in order to obtain the official organic certification.

The grapes are harvested by hand and immediately pressed once they arrive in the cellar : the pressing is gentle and slow, it lasts about 8 hours.
The juice is then left for 24 hours at a temperature of 10°C for static settling : this allows the large lees to settle at the tank bottom.
The juice is then drawn into concrete tanks and the fermentations take place under temperature control for about 6 weeks. The must is racked and then matured on its fine lees for 8 months before being filtered and bottled in May.
