OUR OPINION: superb! The blood orange aromas make this cuvée inimitable! In a few years, the wine will develop tertiary aromas of ripe black fruits and spices, as did the 2019 vintage. A real favorite!

The soils of the Sancerre vineyards have been shaped by erosion from the different geological facies exposed by numerous faults, including the two famous north-south faults known as the Sancerre and Thauvenay faults, which cross the vineyards from one side to the other.
These bring the Upper Jurassic (-154 to -140 Ma) layers to the west into contact with the Cretaceous (-96 to -65 Ma) and Eocene (-64 to -34 Ma) formations to the east.
The 40-year-old vines of the Silex cuvée are planted on flint soil formed in the Hauterivian (122 million years ago) and Cenomanian (96 million years ago) periods, as well as in the Eocene (-64 to -34 Ma), when the continent gradually emerged from the seas.
This terroir produces nervous wines with flinty aromas that are very pleasant when young.
The grapes are cultivated in accordance with the Organic Farming specifications for which the estate is being converted since 2020.
The grapes are harvested manually in 12 kg boxes so as not to crush them and to risk a premature oxidation of the juice.
In the cellar, the grapes are completely destemmed and sorted manually on a sorting table before being vatted for a 25 days maceration. The marc cap which forms naturally at the vat's top is regularly reincorporated into the must by pumping over, a technique which consists in drawing the juice from the vat's bottom to pour it back to the top on the marc cap.
The must is then pressed and placed in 228-liter oak barrels where it completes its malolactic fermentation and matures for around 12 months. 1/4 of the must is aged in new barrels, 1/4 in one-wine barrels, 1/4 in two-wine barrels, and the last quarter in three-wine barrels.
The wine is neither fined nor filtered before bottling.
The bottle is sealed with a DIAM5® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
