SOIL: clay-siliceous soil dating from the HAUTERIVIAN (Early Cretaceous) period. This terroir produces lively, crisp wines with highly pleasant gunflint aromas in their youth.
HARVEST: manual, in 12 kg crates.
SORTING: by hand on a sorting table.
VINIFICATION: total destemming of the grapes. 25-day maceration in vats with pump-overs (remontages). Fermentation using indigenous yeasts. The must is then pressed and transferred to 228-liter oak barrels.
AGEING: 12 months in 228-liter barrels:
BOTTLING: without fining or filtration.
