OUR OPINION: elegant and distinguished.
Other available vintage:
The old Pinot Noir vines are planted on a large plot of flint clay, located on the eastern slope of the Sancerre hill, facing the Loire. This flint soil gives the red wines vivacity and minerality, they often have a slightly smoky nose.
The grapes are cultivated in accordance with the Organic Farming specifications for which the estate is being converted since 2020.
The grapes are harvested manually in 12 kg boxes so as not to crush them and to risk a premature oxidation of the juice.
In the cellar, the grapes are completely destemmed and sorted manually on a sorting table before being vatted for a 25 days maceration. The marc cap which forms naturally at the vat's top is regularly reincorporated into the must by pumping over, a technique which consists in drawing the juice from the vat's bottom to pour it back to the top on the marc cap.
The must is then pressed and placed in 228-liter oak barrels where it completes its malolactic fermentation and matures for around 12 months. 1/4 of the must is aged in new barrels, 1/4 in one-wine barrels, 1/4 in two-wine barrels, and the last quarter in three-wine barrels.
The wine is neither fined nor filtered before bottling.
The bottle is sealed with a DIAM5® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
