The En Spois plot is on a terroir of Triassic marls : at the top of the slope, the soil is composed of Rhaetien black flaky marls that give way progressively to rainbow Keuper clayey marls at the slope foot. Those marls were formed in the Triassic period, between -252 and -201 million years ago, when the region formed a set of shallow saltwater lagoons. At the rivers mouths formed sandy beaches, at the origin of the current Rhaetien black marl, while the fine clay particles decanted in the lagoons before forming the current rainbow Keuper clayey marls of Keuper.

Less compact than the Lias marls, they have good water retention properties and make it easier for the vine root network to penetrate the soil and to find life-saving hydric resources in the summer, especially in the event of drought.

The Chardonnay and Savagnin vines were planted in 1993 by mass selection, that is to say from grafts taken from the very old estate vines to preserve their genetic heritage.

The harvest is manual, the grapes are de-stemmed and pressed by pneumatic pressing. The fermentation starts spontaneously in vats with native yeasts. At the end of the malolactic fermentation, to avoid any accident, the must is slightly sulphited then aged under veil in 228 liters oak barrels for 6 years. It is then filtered before bottling to avoid any autolysis phenomenon (self-destruction of dead yeasts).

En Spois is a single plot vin jaune naturally open and fruity, easier to access than other estate vin jaune. It is is meant rather for uninitiated people who wish to discover this type of wine.

Food wine Pairing

Le vin jaune offre des arômes de noix et d'épices qui s'accordent tout naturellement avec les morilles, les truffes, et le curry. Nul étonnement à le voir servi sur un coq ou un poulet de Bresse au vin jaune, le plat traditionnel du Jura.

Mais il fera aussi un beau mariage avec une volaille cuisinée au curry ou encore un beau homard au vin jaune et aux morilles. Côté dessert, on le savourera sur un beau Comté de 30 mois d'affinage, accompagné de quelques noix.
