Terroir

VINE AGE: 35 years old.

LOCATION: a blend of grapes from the lieu-dit Letzenberg and the Grand Cru Steinert.

EXPOSURE: both terroirs face due East. The grapes are protected from the intense afternoon heat, thereby preserving their freshness and acidity.

TERROIR:

  • the lieu-dit Letzenberg is an outlier hill composed of limestone conglomerate from the edge of the Upper Rhine Graben dating back to the OLIGOCENE era, preserved by faults that bring it into contact with oolitic limestone from the JURASSIC period. Made up of pebbles of various sizes cemented by calcareous clay or calcareous sand, these scree deposits have a variable composition: they are rich in active limestone, but soil fertility relies heavily on the clay which binds minerals and retains water.

  • the bedrock of the Steinert lieu-dit is a yellow oolitic limestone dating back to the DOGGER (Middle Jurassic) epoch. It is covered on the surface by stony scree of the same nature dating from the QUATERNARY period. This omnipresence of stones gave the Grand Cru its name, "steinert" meaning "the stony field". This specific geology induces strong water stress for the vine, forcing the roots to dig deep into the ground.

Viticulture & Vinification

HARVEST: manual.

YIELD: N/A.

SORTING: at the winery.

VINIFICATION: only 50% of the grapes are destemmed. Crushing in vats on the first day, followed by an 18-day maceration with pump-overs carried out every 2 days for the first 10 days. Indigenous yeasts. At the end of the maceration, the musts are pressed, and the free-run and press juices are blended before ageing.

AGEING: 20 months in 4th-fill Burgundy oak barrels.

BOTTLING: without fining or filtration.

CLOSURE: natural cork
