VINIFICATION: only 50% of the grapes are destemmed. Crushing in vats on the first day, followed by an 18-day maceration with pump-overs carried out every 2 days for the first 10 days. Indigenous yeasts. At the end of the maceration, the musts are pressed, and the free-run and press juices are blended before ageing.
AGEING: 20 months in 4th-fill Burgundy oak barrels.
BOTTLING: without fining or filtration.
