The Pinot Noir vines that make up the Pinot Noir Songe d'une Reine cuvée come from the Letzenberg and the Grand-Cru Steinert vineyards.
The Letzenberg terroir faces east. It is a mound of limestone conglomerate on the edge of the Rhine ditch, preserved by faults that bring it into contact with Jurassic oolitic limestone. This marl-limestone soil deposited by torrents during the Oligocene is made up of pebbles of varying sizes cemented by limestone clays or limestone sands. The composition of the scree varies: it is rich in active limestone, but its fertility depends on the clay, which binds the minerals and retains water.
The steeply sloping Grand Cru Steinert,to the south-west of Pfaffenheim also faces due east. Its limestone subsoil is covered in the lower third by stony scree, while marl and limestone outcrop at the top of the slopes.
The vines are grown according to the principles of the Organic Farming and the Biodynamics.
The grapes are harvested by hand, then 50% de-stemmed before being vatted. The grapes are crushed on the first day, then macerated for 18 days, with pumping over (a process whereby the juice is drawn off at the bottom of the vat and reinjected onto the cap of marc floating on the surface) carried out every other day for around ten days.
During this time, alcoholic fermentation starts spontaneously under the action of the indigenous yeasts.
Once the maceration phase is complete, the must is pressed and the free-run juice and the press juice are blended in 4-wine Burgundy barrels for a 20 months' ageing phase.
Once the ageing is complete, the must is racked without fining or filtration, then bottled.
