LES TERRES ROUGES is made from vines located on the heights of the village of Aubignan, in the Rocans district.
The plots are exposed to the southwest and the soil is composed of modern alluvium or alluvium of the ancient terraces of the Quaternary (-1 Ma) which rest on an older base where we can find the Miocene molasses (-16 to -11 Ma) as well as the indurated sandstones and the consolidated clayey limestones of the Burdigalian (-23 to -16 Ma).
It is difficult to define a precise type for the red wines of the designation, so much their particularity and their personality are linked to the winemaking which is applied to them.
This vineyard, whose reputation is growing, is in full development, in search of its identity. It undoubtedly possesses a high qualitative potential, but not yet revealed at it is worth.
The vines are grown according to the Sustainable Farming principles and the rows are grassed. Their yield is about 35- 40 hl/ha. The grape varieties are vinified separately.
The grapes are harvested by hand and destemmed before being put into vats for a first pre-fermentation cold maceration followed by a low temperature maceration of 10-15 days. Daily pumping over, which consists of removing the juice from the vat's bottom and re-injecting it at the vat's top, allows for a gentle extraction of tannins, color, and aromas.
Fermentations are done without yeast addition.
Once the maceration phase is over, the must is pressed, free-run juice and press juice from each grape variety are blended and then the whole is transferred to concrete tanks for an ageing phase of 7 to 8 months.
When the ageing phase is over, the must is then lightly filtered and bottled.
