The Vignoble du Rêveur plots are located in the heart of the Bennwihr village and rest on a graben from the Quaternary, a geological period dating back more than 2 million years. This graben favored the alluvium spreading in the central region, the debris consists of materials coming from the granite and gneissic basement of the Vosges and the Black Forest.
PIERRES SAUVAGES wine is a blend of three white and red varieties of pinots from Alsace: pinot blanc, pinot gris and pinot noir. It is therefore rather atypical for the region as it is a white wine with a part composed of a red variety, pinot noir, vinified as a white.
The vines are cultivated according to the Biodynamic principles and the wines are certified by the private organization DEMETER. The grapes are harvested manually, then vinified in barrels.
Fermentation starts spontaneously under the native yeasts action, and no oenological correction is made during the various vinification stages. The must is then aged on its fine lees in oak casks for a year.
The wine is not filtered before bottling.
