OUR OPINION: I really like the wines made from Serine. This variety, ancestor of the Syrah, gives concentrated and rich juices, very complex and tasty. 2018 is an excellent vintage.
The wine's name LES SERINES designates the grape variety that makes it : it is the current Syrah's ancestor that was still cultivated before the phylloxera epidemic and that some vine growers had kept on their plots. These vines are very old and this variety is now saved by mass selection in a conservatory. Its fruits are smaller than the Syrah's ones, the yields are lower, and the wines produced are very rich, concentrated and intended for a high cellar potential.
These very old vines benefit from an exceptional terroir composed of various outcrops of muscovite granite (white mica) and biotite granite (black mica rich in iron) : those two rocks are magmatic rocks formed in depth by the magma cooling and raised under the effect of plate tectonics. There are also bands of dark anatexites with cordierite, a granite formed by the molten continental crust's about 297 million years ago.
The plots are located on hillsides and terraces, and are exposed south / southeast. The harvest is manual, the grapes are crushed and partially destemmed. The alcoholic fermentation takes place in open vats, approximately for 3 weeks, with punchings which allow a better extraction of the grapes aromatic compounds. The malolactic fermentation takes place in oak barrels in which the must is aged for 18 months.
The bottle is sealed with a DIAM30® cork stopper which guarantees the absence of any TCA contamination or cork taste.
This wine is a long-keeping wine that must wait 4 to 5 years before tasting and that we can let for fifteen years in cellar.
