ORTHOGNEISS is made from grapes of Melon de Bourgogne planted on an Orthogneiss soil which gives its name to the cuvée. It is one of the three famous estate's muscadet wines reflecting their terroir. The Orthogneiss rock is one of the oldest terrestrial rocks, formed millions of years ago as a result of plate tectonics. The original rock, the Granite rock, were metamorphosed under the effect of plate compression and temperature rise by partial recrystallization and deformation of its structure, giving rise to the orthogneiss rock.
ORTHOGNEISS wine has to be kept in cellar a few years so that it can gently develop its tertiary aromas. Its cellar potential is lower than the GRANITE wine's one but much larger than the CLASSIC wine's one.
Yields are limited to 35 hl/ha to obtain a gastronomic wine. The grapes are manually harvested, the whole harvest is gently pressed by pneumatic pressing. No settling is carried out, the must ferments with its native yeasts (alcoholic and malolactic fermentation), then it is aged on lees for 15 to 18 months in underground vats, filtered and bottled.
The statement "Elevé sur lies" is not labeled on the bottle because this mention requires a bottling date between 1 March and 30 November of the year following the harvest's one, a constraint that the domain does not want to follow.
