TERROIR


The white wine LA GRANDE OURSE is a blend of 3 grape varieties : Grenache blanc (60%), Roussanne (30%) and Bourboulenc (10%).
Since the vintage 2019, the wine benefits from the Côtes-Du-Rhône Villages designation (the vines have reached the necessary maturity for it), and the concrete eggs have replaced the vats for a part of the must's ageing, what gives the wine elegance and lightness.

The plots that Pascal CHALON has reserved for white grape varieties are located on the TULETTE terroir, in a place where the soil is predominantly sandy. Some of the vines are located on a hillside, where they benefit from a recent soil of more or less gravelly and sandy clay, while the other part is located on a plateau with predominantly sandy soil.



WINEGROWING & WINEMAKING


The vines are cultivated in accordance with the Demeter Biodynamic specifications and the care practiced on the plants is carried out using biodynamic preparations and herbal teas.

The grapes are harvested manually and are sorted directly in the vineyard at picking time. Each grape variety is vinified separately, with very moderate use of SO2 during the different stages of vinification.

After harvest, the grapes are immediately pressed by gentle pneumatic pressing. The juice thus obtained rests in the tank to be slightly settled. The juice is then racked and transferred in demi-muids, and in vats for the winemaking.

The musts then carry out their alcoholic and malolactic fermentation in both these containers with the native yeasts and bacteria. It is racked and matured on its fine lees for 11 months in demi-muids and concrete eggs.

At the end of the ageing phase, the musts of the different grape varieties are blended, then filtered before bottling. No fining is done.
