EXPOSURE: hillside vineyards, mostly East-facing.

VINIFICATION: the grape varieties are vinified separately. The grapes are immediately pressed using a gentle pneumatic press. Settling of the must, then racking into vats and demi-muids for fermentation with indigenous yeasts.
AGEING: 11 months in new demi-muids (600L oak casks).
BOTTLING: blending of the musts at the end of the ageing process without fining, followed by filtration before bottling.
CORK: natural cork.
