The Vincent Bachelet's Aligoté vines are located in the Terres Blanches area of the commune of Chassey-Le-Camp, halfway between Chassagne-Montrachet and Bouzeron. They are therefore planted right on the hillside, unlike most of the Aligotés planted on the plain.
The soil is made up of a thick layer of Toarcian marl, 30 to 40 metres thick, formed at the end of the Lower Jurassic (from 183 to 175.6 Ma). Throughout this period, the sea covered the region, including, it seems, the crystalline basement that is now bare; the marl-type sedimentation bears witness to the presence of a deep, cold and calm sea.
The vines are managed according to the principles of an "intelligent" sustainable agriculture. Treatments on the vines are carried out only when absolutely necessary.
The grapes are harvested by hand and the whole bunches (berries and stalks) are immediately pressed in the winery. The alcoholic fermentation takes place in the presence of indigenous yeasts, followed by the malolactic fermentation.
The wine is aged for 11 months on its fine lees in barrels of 1 or 2 wines. Regular stirring of the lees is carried out during the first months of ageing.
The must is then racked into stainless steel tanks to rest for 1 month. It is then fined and filtered before bottling.
The bottle is sealed with a DIAM5® cork stopper which guarantees the absence of TCA contamination of the wine (or cork taste)
