The nose is intensely perfumed and juicy. The black fruit aromas dominated by blackcurrant are delicately wrapped into spicy flavors and a nice, well-integrated oak that makes the whole appetizing. Beautiful texture in the palate, the tannins are fine and melt after a few hours. A lot of elegance for this Cahors wine, a nice success!

This vintage marks the beginning of a new life since Benoît is now the estate owner and the only master on board to drive it. What he does with talent, if we judge the quality of his wines. The grapes are hand-harvested, when the grain shows a complete maturity of its tannins and seeds. The stalks are not preserved, and the crushing, after the sorting phase, is very light.

The fermentation takes place in small stainless steel tanks for about 25 days, the must is then aged in oak barrels of 400l (half of them are new) for 12 months.

The sweetness of the extraction carried out during the vinification phase and the oak barrels ageing give to the wine this elegant and fine texture that we have pleasure to taste. This is a Cahors that deserves our full attention.

We recommend opening the bottle or decanting the wine a few hours before serving. The tannins,on contact with oxygen, can then ripen and offer a softer palate.

Bu dans sa jeunesse, Clos d'Audhuy s'accorde à merveille sur des grillades, une côte de porc ou une échine grillées, des côtes d'agneau au barbecue. Une volaille rôtie et épicée lui fera également honneur. Avec le temps, les arômes se complexifient, la matière se densifie, il est alors le vin idéal pour accompagner tous les confits: confits d'échine de porc, de canard, d'oie, de volaille, etc.
