The BOURGOGNE ALIGOTÉ cuvée is a wine produced from Aligoté vines planted in 1949. It is also a blend of two plots: the place called Champ Forey which is 60% of the wine's composition, and the place En Auvonnes, which represents 40% of the blend.
The Champ Forey and En Auvonnes plots have the same terroir which is made up of cone gravel dating from the last Quaternary glaciation period that occured 20,000 years ago: gravel and pebbles initially coming from the plateaus and transported by ancient waterways during the successive freeze / unfreeze episodes accumulated in the valleys.
The estate is certified Organic Culture.
After the harvest, tthe grapes are rigorously sorted and then pressed using a vertical press for 5 to 7 hours. 2/3 of the must is then fermented in old barrels of several wines and the remaining 1/3 in stainless steel vats. The alcoholic fermentation starts spontaneously under the native yeasts action, followed by the malolactic fermentation. The must is then racked into old oak barrels to age for 12 months.
When the aging phase is over, the must is drawn off without fining and then lightly filtered only if this operation is necessary. It is then bottled with a light addition of sulfites to stabilize the wine.
The bottle is closed by a cork of the DIAM®'s brand, specially designed to guarantee zero wine's contamination by the cork, called "cork taste", thanks to the use of the cork flower previously cleared from the molecule responsible for this aromatic deviance.
