The TROUSSEAU LES BRUYERES is a 100% Trousseau parcel-based cuvée, where the 40 years old vines are the result of massal selection, a technique that allows the genetic heritage of the mother vine to be entirely preserved.
The Les Bruyères plot is located on the Arbois village.
The plot Les Bruyères faces south in a natural amphitheatre of the village of Arbois. The soil is made up of schistose marl from the Triassic period, dating from the Rhetian period, a stage of the upper Keuper, and whose sedimentation took place between 252 and 201 million years ago: at that time, the Jura region consisted of vast, shallow and calm lagoons.
This substratum is covered on the surface by a thick layer of run-off silt, very beneficial to the vines roots that can easily penetrate the rock and benefit from a water resource that is essential to overcome the summer droughts.
The vines are cultivated according the principles of the sustainable agriculture. The treatments are only applied in the event of fungal attacks, because it is necessary to preserve the yeasts diversity on the grape skins.
The grapes are harvested manually and then totally destemmed. The alcoholic fermentation starts spontaneously under the native yeasts action, the skins cap is submerged every day, in order to extract both color and tannins.
The skins maceration lasts 20 days, the must is then pressed and matured in barrels for 14 months. The wine is not fined, just filtered before bottling.
